I may add i understand your confusion. It is a kind of humour that is often misinterpreted as racist itself. A good example of this is Family Guy racist jokes, like this one:

The inattentive eye (or the biased eye) may see this and think "why are they laughing at the black guy being beaten up?", but this is an obvious criticism to american police racist behaviour. In the 100th episode of Family Guy, in which Seth MacFarlane appears and talks to the audience, he says:

Family Guy likes to hold a mirror up to society and say: "Society, you're ugly and we don't like a lot of what you're doing."
