I recall an episode of the anime where they mentioned that Farfetch'd taste good, so yeah, I think they do. Oddly enough, there were some episodes where they were eating fish and lobsters.
Not pokemon, actual fish and lobsters. Also, another one had a Pidgey eating a worm. Not a Caterpie, a worm.
Maybe they have non pokemon animals for food?

Eating pokemon is definitely accepted as canon in the pokemon world.
Farfetch'd was even hunted to near extinction because it was so tasty.... and it carries around a leek that people used to cook along with the pokemon.

Aerodaytl and extinct flying pokemon. It's hard fangs suggest that it was a carnivore. it's sharp claws where properly used to capture prey.
This also means that it isn't just human who ate pokemon but pokemon would eat other pokemon.
I would eat Vanillish, cuz you know what they say there's always place for ice cream.
It kind of makes you think of pokemon like Magnemite and if people use their body part magnets for other things or their screws, and you'd think PETA would be mad at us for taking advantage of pokemon based on animals! If magnets and screws were sapient, they probably wouldn't let us use those either.

Speaking of rock-hard I wouldn't want to eat steel, rock, ground, fire, poison, ghost, or electric.
the best tasting Pokemon would probably be either water, grass, bug, normal, and flying.
I could really go for some Pidgey. Probably our equivalent to chicken.
