In the interest of some more/better information, I might suggest adding a note on "flocculation" or the collection of yeast in the fermenter or other aids in judging the fermenting process as finished. You might also consider the optimal temperature(s) for yeast to work.
As for the quality of this one, you should double check your audio work. If this was voiced on a headset, you can raise the mic' to just above your nose to avoid hissing noise. You could also try tuning the mic' sensitivity down with audacity (a pretty sweet recording software available for free!
