My easiest is from the game Earthworm Jim.
At the end of level one in both 2-D games you fight "Bob the Killer Goldfish",
You automatically knock over the bowl or eat the aquatic mastermind.
Now before you say "this is a joke", believe it or not, he actually was a boss, before the "battle" begins, some Mortal Kombat style text appears as an announcer yells "FIGHT!" this boss is so easy you don't even really have to fight him. What kind of boss is that? I'll tell you what kind, the easiest boss ever.

Another supremely easy boss I've battled would have to be the Final Hazard from Sonic Adventure 2 (battle). You're in super form and switch between Sonic and Cloud (oh wait, that's Shadow, ah well both emo) and you have to hit the huge glowing weakpoint that always appears in plain sight as he attacks with horrible aim with some glowing egg things, attacking with a laser with even worse accuracy, or both. Six hits and you have beaten the final boss. (thats right the FINAL boss). How could you make it much more simple? easy, make him kill himself.

Another easy boss fight is the first fight with bowser in New Super Mario Bros (according to my friend). Dodge an easy attack, step on a switch, You Just Got Served!!! I thought bowser was supposed to be tough.

To get more serious, Icarus in God of War II was so easy. You just need to tap the attack buttons and do the correct stick rotations.

he was hard until brawl. then they nerfed him and now you can finish him in like fifteen seconds as anybody on normal.
The final boss in Final Fantasy X. You literally could not die. THe characters would automatically be revived.

Well he does heal himself for 9999 every time her takes a hit so you need to know enough tactics to either stop him healing or to deal more than max damage in 1 hit.
Another one would be the bosses in Deus Ex. You are chased by the 3 mech people for ages and get them talking to you warning you you will die etc. Then when they finally meet you you just shoot them once with a GEP gun and they explode. Or say the killphrase. Even the guy who chases you to area 51 gets 1 shot with a GEP gun. Stupidly easy.
Usually the 1 shotting rocketlauncer etc is cheat or hard to get, but you get it given to you the first 5 minutes of gameplay and if you don't collect it in the airfield.
