I never fucking finished Earthbound because of how shit it is. Yes, it's a cool game, but it's severely unpolished and just messy to navigate in. Itoi's only good game was Mother 3, really.
As for the fight with Lord Dink, you just need to cast Break Grill Ω a bunch of times and dump all your counters on Ness while occasionally hitting Porky.

I beat all three games and I find myself going back to EarthBound much more outta them all. The gameplay is better and less grind heavy, the humor is weird but charming and I didn't find myself having a hard time navigating it besides the annoying monkey caves.
Mother 3 has an amazing story but I hated being forced to grind at certain points, and EarthBound Beginnings is a grind fest through and through.
In other words, EarthBound isn't shit IMO. I have the least amount of problems with it.
