Cant you just google the question instead of starting the 200th "I JUST GOT AN ITOUCH WHAT APPS DO I NEED" thread?
First off, I'd say the Facebook app and last fm app are nice. Also, instead of AIM, get Palringo since it supports Yahoo MSN and AIM. I'd try Rolando Lite, and if you like it buy the full version. Also, Mocha VNC Lite (or the full version). It allows you to access your computer desktop through your iPod (with a bit of configuration of course)
