I liked the whale fight from RE4 or the colossus fight from God of War 2. They were not necessarily challenging but were so damn fun and badass.

I have. She's much more fun to fight in REmake though, which is why I said that game over UC, and in REmake you can't kill her.

Id say Gill in Street Fighter 3 was probably the hbardest boss I've fought recently but my favorite boss fight is in Metal Gear Solid 2 when you fight the three Metal Gear Rex's and afterwards own Solidus

I hated fighting Ganondork (lol) in OOoT, actually. I could beat him easy but it took a while, I just didn't like battling him. I did however, like battling Ganon. I also liked fighting King Dodongo in that game. My favorite boss ever has to be the sand dragon thing on Majora's Mask. Being that tall was awesome.
