As someone who does all his own cooking, I love way too many dishes to have a single favorite.
I love cooking mostly Italian dishes, but I would love to be able to do things like sushi someday.
A few of the dishes I love include:
Chicken Marengo (this one is kind of Italian-french)
Carbonara (I don't make it often, very greasy)
Minestra Maritata (also known as wedding soup)
And all sorts of different pastas and sauces.
I'm always very meticulous about my food to, and I prefer to do things in more traditional fashions. If I ever have wife, She'll have to either be as good a cook as I am, or I'll have to train her. I absolutely love food, not just as a taste, but as an experience, and a representation of culture.
If I were rich I'd travel a lot like Anthony Bourdain and just experience great meals.
