I've been playing with Flash 8 and the Bitmap Data class, and I've come up with this. It runs pretty smoothly, though I'm willing to bet it will start to lag if you record for too long.
So, what do you think?

No, I don't believe it was because there was no way in Flash 7 to track what was happening in a video.. me and Amish tried but failed. Anyway this used the BitmapData.draw(source) method so it's not possible that way.

Yeah, you can do it in Flash 7, but the only con is it won't be done all client-side -- you would need Flash Communication Server.
By the way, look at the memory consumption as you record.
