You forgot to mention that egg is also a commonly used ingredient, though I guess there are so many toppings it's hard to list all of them.
As to Onegai below me, sushi isn't the only reason blue fin are almost exctinct, and there are plenty of other things more destructive to the enviornment.

But still fantastic. The voice acting was superb, and I read a review that claimed it was worth it just for the cucumber.
