I'll give you an advice: check on one old DOS game called Tie Fighter. It is STILL better than lots of other games of this type. And a perfect example of how (back then!) it was possible to make a the flight fully controlled with the mouse movement.

Pause the game and click the bottom left button if your mouse is offcenter
Boost around to dodge stuff and make enemies explode by destroying their balloons (which gives you boost). Fratricide among enemies is possible and gives a lower score than directly crashing their balloons.
Controls:
AD to roll
W to boost
S to stop in midair to double pitch & yaw speed
Mouse or arrow keys to control pitch & yaw
Space or LMB to fire gun
P or click the pause button to pause

This game looks like it's still not finished so here's some things you need to make it look finished:
1. Make or find a graphic of the buttons so you don't have to use the default unity button.
2. The medals icons look bad so if you can't draw these then learn how to draw better or find somebody to draw them for you.
3. When you fire a gun it doesn't look like you did so make the bullet stand out more and add a sound when that happens.
sfx mixing needs to be worked on first, shit is annoying af since it's really hard to tell what anything is anyway. also, wtaf is that music?
visually disorienting, really hard to tell what anything is, where you are, where missiles are coming from. missiles seems near impossible to dodge and they come in packs of 2 or 20 and you just die, your game is done.
idk, it's not terrible or anything but figuring anything out is a serious challenge

Yeah, it was hard to really recommend this. It just got frustrating! I will admit that it was at least creative. It was still hard to make heads or tails out of it. The sounds got a bit annoying. Those missiles were so damn distracting!
I guess I have to give it credit for being challenging. The graphics were actually quite good. It just doesn't do that much for me. I would have to train too hard to really get it down. There were too many details to keep track of.
