You can adjust the size on the main menu. That, or export a large picture, then adjust the canvas size in a graphic editing program (that's basically what I do, as most of the ones I do are not showing the entire scene).

You can sort of sculpt them from hand. Just raise the water level on the water screen (around 150m should do), and then flatten the land on the Landscape > Terrain Modification menu (Green Circle).
You can then open up the Free-hand window (red circle), and use mouse clicks to adjust them. Left click raises, and right click lowers. The only trouble is that this method greatly exaggerates elevation, so it's hard to not get really lumpy islands rather than flat or slightly mountainous.

This started out as a simple project, practicing with Terragen(awesome program btw <3), and it ended up as me making a wallpaper :)
