While Hank seems to be able to take a lot more punishment than his enemies, many agents and grunts need more than one hit to go down. On the other hand it's true that some guys in the series dies from just a few fist punches.
About the falling: it depens on the hight but the one upon the other guy falls will most likely get hurt anyway. I only remember Hank falling on people and he always survives it.
About the knife: I think I know wich scene you are talkning about. There the guy only falls from the hit (wich is still ridiculus) and dies when he gets shot a few seconds later.
By the way if someone gets seriously injured they will just lie on the floor and move not much so there might be survivors. Note that in the later episodes people ge more and more clothing. Who konws, maybe they wear the"magical bandage" underneth.
