I study cooking, and I ahve work in quility restaurants, it is needed to peel stuff witha knife, the less you use your ahnds the better. For the sake of the food sanity and to prevent cross contamination.
Besides that, i do think the same you do... games quite repetitive, cuts aren't done that way, but for the pasta, oil is added at last, if you put a dash of oil in the salted water, the salt wont stick to the pasta.
