Fair enough, all three are one off from your 1st choices. I'm all for medium-rare steak, although if it's having a steak meal when visiting my parents I'll take the bullet and have it well done. Just need pubs again for my well desired medium-rare steak meals.

Steak should be as close to raw as the chef is willing to make it. Sometimes they will serve you a raw steak and those are the best days.

Do you like it warm? I know quite a few folks who throw it on the grill and sear each side for MAYBE 20 seconds and eat it just like that.

That's usually how I get it, grill marks and that's done. Room temp up to maybe 30C is where foods are most flavourful (ie not dulled by heat or coolness).
This all does depend on the cut. Something tougher like a sirloin might need to be rare (1) and a ribeye with all its fat that needs to be rendered can be cooked as high as medium-rare (2). I do prefer a tenderloin to be raw. Burgers can be cooked medium rare if they were ground that day.
