Also, Twisted Wave for iPad/iPhone is a super duper useful one ($10). :3

Just make sure to factor out everything else in your recording environment and the programs will be lit

I use Sony Sound Forge Audio Studio 10.0. It's not the latest version, but it works fine for my purposes. And I was able to save quite a bit, purchasing it after a later version had been released.

Audacity
Man it's free. Basic, lightweight. Old, so there's tons of support and documentation. Reliable. More than sufficient for voice overs and basic sound editing. If you need somewhere to start or don't want to pay, goes without saying that this is number one choice.
I use this over any other paid software I've had too. Because it's just...nice. Simple and friendly.

Audacity. Though I wonder if I should bit the bullet and get Reaper.
