You'll need flash for that. Check out this page for a list of programs, both free and paid. There's also lists for other kinds of resources on those pages. I'd recommend the original Flash, though it's a bit expensive. You could try the 30 day trial and see if you like it.
photos
You'll need a camera, just start taking pictures. :) Photos aren't allowed in the art portal, though, so apart from creating your own photography thread in the art forums there's no real place to showcase them.
Music
If you want to make digital music, FL Studio is a good choice. For editing audio and editing existing audio, Audacity works well (free). If you want to record real music you might want to try Cubase, though it's a bit expensive. Ejay is an easier variant, where you make tracks out of predefined samples.
And Animation
That's also flash.
