Lightspeed Champion really relaxes me a lot, I'm actually listening to them right now and Red Hot Chili Peppers. Some others too.

Usually just something acoustic, or some really bluesy stuff.
I tend to go with more of the post-rock/instrumental music when I need to relax, such as This Will Destroy You, Explosions in the Sky, 65DaysofStatic, If These Trees Could Talk... etc etc.
Oh, then there's also Elliott Smith and a few songs from Astronautalis which help as well.

Thievery Corporation, John Coltrane, Jaga Jazzist, some roots reggae and more smooth hip-hop.
Also, punk can be oddly calming at times.
