I've always loved the music from most games from the Zelda series, especially Twilight Princess. Not so keen on the music from the cartoon ones though
I've always enjoyed Doom II's soundtrack, but it's not my favorite.
The Command and Conquer series has always tickled my fancy, it has this cheesy but cool esque to; which i basically what all the games are like.

I agree, it's wide range and variety of metal bands really surprised me. Some stuff that I've never even heard of that was awesome was on there. I love that game forever for putting my favorite Racer X song, Technical Difficulties, in there. I screamed like a little girl when I first heard it.
Black for PS2 and XBOX....it has a nice soundtrack...check on Youtube there's a guy that has uploaded all of them....
The original NFL Street. The X-Ecutioners original mixes were awesome and got a great feel of street football. And there was like 10 different songs.
Here Comes the Butcher!
Best soundtracks must be in The Beatles: Rock Band, Crash Bandicoot 2, Crash Bandicoot: Warped, Spyro The Dragon, Hotel Dusk: Room 215 (Jazz ftw), GTA: Vice City, the Fusion station in GTA4 was great, Quake, Doom 2, Duke Nukem 3D, Jet Moto 2, N2O: Nitrous Oxide, wip3out and Okami.
Coincidentally, these are also some of my favorite games ever. Soundtracks really are important.

But that's besides the point. I would like to say, most of the stuff Grant Kirkhope composed such as:
Eschebone (JetForceGemini)
HAG-01 (BanjoTooie)
Hideout Helm (DK64)
Frantic Factory (DK64)
Most of the stuff composed by Tanaka Masafuni:
Pleather for Breakfast (NoMoreHeroes)
Rave On (Killer7)
Devil May Sly (GodHand)
And on a different note, Ecco the Dolphin had some very eerie and alien music
