How dose Tom, Dan Paladin 'n' the other guys working on Castle Crashers convert .fla/.swf to .Xbox :P

Do they program with ordinary flash action script?

The graphics are done in flash. Not the programming.

Yeah, MS has their own super-secret SDK for Xbox developers to use in their games. I believe, even for XBLA, that generally C++ is used. I do think I remember reading about one game using C# or something... don't quote me on that.

I haven't been following the CC development or anything, but Flash can still be used to some degree. For instance, I remember reading in the God of War (original) post-mortem that the interfaces for the entire game were built in Flash, and a swf player was integrated into the game, or something to that effect. This was back in the Macromedia days... when I read about it, I checked Adobe's site (more recently) to see if I could do something like that as well, but they had put some limits on doing stuff like that. These days, though, I think they've made everything free to use again (...) but don't quote me on that.

Menu interfaces for alot of games used to be built in Macromedia Director. I'm not talking like a hundred years ago either, I mean like PS2 and XBox games.

I think they use XNA on the whole.

They don't.

From here:

Xbox 360 games are programmed using the Microsoft® Visual Studio® development system. The Xbox 360 development kit (XDK) supports development using either C or C++.
