The wine one is the best.
It's always worth picking up a book on layout though and take a look at some of the common practices used, and look round the web at sites like csstux, csszengarden etc for inspiration and ideas (but don't rip anyone off).
Do you have coded versions?

I don't believe you shot the photographic elements of the wine one, which would mean they are stock images. Not bad per se, but the resolution is terrible. The left picture in particular looks like it was stretched beyond a sensible limit. Don't do this to your images - find a higher resolution or find a better picture.
The red used for the branding and navigation is particularly garish and doesn't show up well. It looks rather amateurish.
It does also look a little dated - I'm by no means saying stick gradients and reflections in there. However it's the type of website that could use a little finish, and a touch of magic. When in doubt, learn from what other people are doing.

Yes, I'd have to agree with cherrie on this one. =[ I mean hell get a coded version poppin and maybe that might change my opinion, otherwise I'd say check out: www.pixel2life.com see if they have some tuts on blending or color schemes.

I agree with this whole post.
It does look beginner-ish. But that's expected, because you said they were your first three :P
Make coded versions of them, and as Jcrypt said, check out pixel2life. it's a great tutorial site -- I learned a lot of techniques on there.

Not bad at all. I've been doing HTML for a while, just plain HTML (How boring, eh?) But decided to jump ahead 982347 steps and start learning how to make flash websites.
Definitely looks good, though. Sure, it isn't the best in the world, but for some of your first they're pretty damn good, much better than stuff like the freewebs crap.

Here's another.
Designs are fine but this is more programming so we would actually like to see your coding instead.

There all pretty nice.
But yeah, as Jessi said, this is more so programming than design.
So slice em, code em and post again. Then you'll get some nice critical reviews :)
