It's about a man (a trumpetist) that tells the history of a pianist he met on the Virginian (a ship). He becomes friends with him and plays togheter in the ship's shows. The pianist (called 1900), was born in the ship and remained in the ship until the end of the movie, where the ship is destroyed with explosives since it became a piece of crap.
The pianist was a very talented guy, and in the movie he played VS another man who claimed to be the inventor of Jazz (can't remember his name).

Nope wasn't Oliver Platt but I found the movie. It is The Legend of 1900.
