prohibited from doing "side" projects? Or working for commisions? Do their contracts usually state that all the work they do belongs to the company?

no, anything they make outside of the company, or even using the companies facilities does not belong to the company unless they asked for it. (duh Adam Philips used to work for a company and he made bitey...)
