I think all three Saw movies had great traps, some more than others, but my favorite device in the trilogy would have to be the one in the third one that twist's your arms and legs to such a degree that the bones begin to snap and poke through your skin.

It was called "The Rack"

the barb wire cage.... where the fat dude had to try and run though it all and then they found traces of stomach acid on the ground it was at the beginning of saw one
