I kid. I thought it was alright in terms of a cover... I would have much rather heard a new arrangement of the song as apposed to a half-assed attempt and doing the original dead on. But then again, some songs just don't exactly translate into other styles...

Case in point; Dolly Pardon's cover of Stairway to Heaven. I mean, she did it entirely with a dobro for the guitar part, a fiddle for the flute part, with banjo and mandolin ornamentations to give some flavor. It's BEAUTIFUL to listen to, but she cut the guitar solo down to 1/10th it's original length and divided that up between the banjo and dobro players, and the rest was occupied by her ad-libbing lyrics and singing with a Church Choir. That's just wrong to me.

I knew you'd get that. And while I do indeed have both versions of that song what I want to talk about now is the happy birthday elton concert. Did you see that? While he did sometimes do that annoying thing artists do with "rocking up" familur songs for a live crowd overall it was just a tribute to wonderfully put together music.

It was on yesterday and he was celibrating his 60th birthday with a concert somewhere he'd been 60 times, new york i think. It was basically a greatest hits set but with an artist like him you have an interesting spread of hits.

I'm sorry, I just stepped foot into general for a few minutes and my IQ took a thumpin'. Won't happen again.

Since I got the day off for Good Friday, I have decided that instead of doing nothing all day that I would be usefull... so I reorganized the family liquor cabinet in order to hide the bottle of Sweet and Sour mix I bought this morning. While rearranging things, I noticed something; my family has a lot booze, and a nice portion of it my folks probably don't realize is there. I found two unopened bottles of wine (one dated from before I was born), two small airplane bottles of tequila (again, probably from before I was born cause they look THAT old), a bottle of Vermouth (shocked the hell out of me, no one drinks martini's around here), a near empty bottle of Triple Sec, my dad's whiskey, my mother's rum, a bottle of sour apple schnapps, a bottle of peppermint schnaps, the vodka and kahlua I bought a few weeks ago, and about 4 bottles of assorted mixers one of which I've never seen before.

My father told me not to bring anymore liquor home until I helped finish off what was already here. So... YES SIR!!!

If no one likes martinis, but you need to get rid of the vermouth, I have a fantastic recipe for a vermouth cream sauce. It's from the Julia Child cookbook The Way to Cook, and it's got tons of real cream and real butter and such in it. Mmm mm MM, coronary.

She used it on a tasty sauteed beef with a side of really wonderfully done potatoes. It was amazing. I cooked it for some friends, who basically inhaled it without tasting it, and I was so discouraged that I haven't made it since.

I gave the most interesting entertainment...
I celebrated my first Passover with Holocaust survivors today. We had a very good time and many of the survivors were impressed about how much I want to write a book on the Pink Triangles.

So well into the party, we're talking about Newt Gingrich's comment and language. English is a second language for all of them, so it's interesting to get a perspective from them.

Sooner or later, a girl talks about having difficulty with grammar. This girl talks about her difficulty with one teacher who I love to hate, and guess what I say.

"She's a Grammar Nazi."

Talk about not being careful! But they all laughed when I said, "I'm sorry if I said anything to..." But they said that it's alright and that they actually liked my personality.

All in all... a positive experiance with a huge embarassing moment.

Haha, I can imagine. Hell, I've showed people how to do mundane things on their computers over the Internet before, and usually by the end of it all, I have a throbbing vein on the side of my head. Teaching kids how to ski would be... well, let's just say you should be able to get a tax return on booze as a working expense.

Here ya go...This serves two generously.

Ingedients:
6-8 white onions, about 1" in diameter
1/2 cup chicken stock
Tarragon or mixed herbs
3-4 medium boiling potatoes
3 tbsp minced parsley
6-8 large mushrooms
3 tbsp minced shallot
2 center-cut beef tenderloin steaks
1/3 cup dry vermouth
1/3 cup beef or chicken stock
1/3 cup heavy cream
Salt and pepper
Butter and light oil (olive or peanut)

Equipment:
2 frying pans, 10"
2-quart saucepan with lid
Side dish - small casserole or bowl

1. Drop the onions into boiling water for 1 minute. Drain. Shave skin from tip and root ends, slip off remaining skin. Pierce a cross 1/4" deep in the root ends. Simmer slowly in the covered saucepan with the chicken stock, a pinch of the herbs, and a little salt until tender (20 min). Continue other prep.

2. Peel potatoes and cut into 3/4" cubes. Dry the surface. Set a pan over high heat, add 1 tbsp each of butter and oil, and when the butter foam is almost gone add the potatoes. Saute without stirring for 1 minute, toss, and sear 1 more minute. Season lightly with salt and pepper and a pinch of herbs, reduce heat to medium and saute for about 15 minutes (tossing regularly). Ready when lightly browned and tender.

3. Trim 1/4" off the stems of the mushrooms, wash, and pat dry. Quarter them. Saute several minutes in butter in the second frying pan, adding 1 tbsp shallots at the end, just as the mushrooms begin to brown.

4. Cut the steak into 1.5" chunks. Set aside the mushrooms and add butter and oil to the empty pan. Heat almost to the smoking point and add the beef, tossing frequently for several minutes (you want it very rare here). Toss in some salt and pour into dish with mushrooms.

5. Spoon all but a tablespoon of fat out of the beef pan, stir in the remaining shallots, and saute a moment. Pour in the vermouth, beef stock, and any liquid from the onions. Boil rapidly and reduce almost to a syrup. Add the cream.

6. Add beef, onions, and mushrooms into pan with sauce. Bring to a simmer. Taste the sauce and correct seasoning if necessary.

Toss the potatoes over high heat to risp, adding a tablespoon of butter, the herbs, and the parsley. Strew the potatoes over the meat and serve.
