I'm not one for gory games. But the goriest games I've played: Doom and RE4.
Though, Doom isn't very gory by today's standards. But at the time I played it (I think I was 6 or 7), it was pretty intense.

With the most blood? I'd say Starcraft, when you nuke a whole bunch of units there its a real bloodbath. Literally 'scariest' gore? My wieners on Doom 3

Silent Hill series has to win, gore on the walls, disgustly sick monsters and bosses, blood covered walls, you get my point.
Or F.E.A.R, you can blow ANY piece off a guy, head, body, legs, arms.
