Not using anti-aliasing will lead to pixely edges (which can be cool in it's own way). If you want smooth edges on your text, or in subtle glows or fading effects, you'll need to mess around a bit.
Since .gif only supports binary transparency, and no gradient inbetween, you'll need to fix the levels of transparency yourself. There's probably multiple ways of doing that, and the most correct techniques would have to take into account that the background is a texture rather than a solid colour.
However, the way I go about it is fairly straight forward. Working in photoshop, after you've readied your document with a transparent background, go File -> "Safe for Web ..." (ctrl+alt+shift+S). Make sure you select file format GIF, check on transparency, and select "#100c0d" as matte.
