RAID can be done either through software or hardware. In software RAID, the operating system handles all of those calculations (which bit goes where, etc). While in the past, this could put quite a load on the system processor, with modern cpu's it's a relatively small hit. That being said, hardware RAID is a vastly improved model. In this case, a RAID hard handles all of the calculations and presents the operating system with a logical drive that is indistinguishable from a standalone disk.
To summarize, stuff like this is handled by highly optimized hardware or software and to the end user is just one of those things that "work."
