Blind Guardian. I love that their songs are all about fantasy stuff like Lord of the Rings and so on.

I'm a Cradle whore first and foremost, but mostly because a) I've been listening to them longest and b) the epic lyricism and c) they just sound fucking awesome to my ears.
Aside from them...
Marduk, Dimmu Borgir, Dark Tranquillity, My Dying Bride, Opeth, Bloodbath, Cannibal Corpse (fuck those guys are funny!), Morbid Angel and Deicide. Oh, and Soilwork, and I don't mind His Infernal Majesty either, though they really aren't heavy enough for me to listen to them more than occasionally.
