Does it have to be so black & white? I like games that give you the freedom to choose a difficulty. If I had to pick one or the other, though, I'd probably pick difficult over easy.
One of the things I really liked about Combat Instinct 3 is that it is relatively difficult to get through the game without taking at least some damage. Beating the third level without the plasma cannon can be a real challenge, too.
