You have a boat made of wood planks.
Each day, you take off a wood plank and replace it with a new one. You put the old wood planks in a storage room.

Eventually, all the old wood planks you started out with are gone and in storage.

You then reassemble the old wood planks into a new ship.

Which is the original ship?

The original ship is the one that you took apart from the old planks and then make it to another ship.

How am I replacing the planks on the sides and bottom of my ship

or is my ship actually just a raft, in which case, why don't I sink every time I remove a plank to replace it

Wouldn't the one you took the planks off originally be the original ship? Because you're only replacing the wooden planks. Not the framework or anything else.
Then again you didn't state what kind or ship it is. It could be anything from something massive to something the size of a raft.

If you put more value over the physical appearance, the original ship is the one made of only the old planks. If you value the experience you had with the ship, it has completely transcended its physical form and can be whatever you want.

Being made up of older materials does not make the ship itself older. The first entirely crafted ship qualifies as the first ship, so the new planks make up the older ship.
