That's a hard question to answer, Red Dead Redemption really had allot of fun mini games.
Still, a game that really introduced me to small activities is probably Fable 2. I always had allot of fun with the bar tending and smithing jobs. Trying to rack up multipliers and such. They were actually kind of monotonous, but i really didn't mind for some reason.
Like ManDeep said Red Dead Redemption had a lot of good ones such as Liar's Dice, Five Finger Fillet, and Blackjack. Another game with some nice minigames is probably GTA V with Tennis, Golf, Races, and a bunch more.

Yeah I probably spent more hours playing golf and tennis than playing the actual game.

Triple Triad and Tetra Master (and FFIX blackjack) are my favorites. It's a shame Tetra Master online isnt a thing anymore. Poker and Liar's Dice in Red Dead was good too but I think my favorite version of video game poker is in Far Cry 3.

Kung Fu Chaos had some really fun stages between the regular fights that I could play over and over with friends. My favorite was the spinning wheel thing with highest speed setting. I also liked the minigames in Kirby Super Star. And Mortal Kombat Deception had good ones. Also, the ragdoll stuff in Flatout.
I spent so much time on the chao garden in sonic adventure 2. It added a ton of replayability for me with all the races and karate and all the different ways they can change depending on who raised them and what animals they were given. Nothing but good memories from those times... except when my memory card got corrupted. That day was uh, kind of tragic to my younger self
Chocobo hot and cold from FF9 was a ton of fun.

I thought of a few more. Caravan in Fallout: New Vegas after getting the hang of it is pretty fun to play. I even had an app to play it on the go before! Another good mini-game is PDA Game from Alien Hominid.
I really enjoy Voltorb Flip in Pokemon Soul Silver/Heart Gold.
The fact that it requires the use of probability and deduction logic is extremely satisfying.
