Depends what you're looking for:

Strategy RPG? Fire Emblem / Final Fantasy Tactics
Portable RPG? Pokemon / Final Fantasy
RTS? Warcraft III
Portable RTS? Final Fantasy XII : Revenant Wings (amazingly fun game)
On PS3 / Xbox 360? Tales of Graces, Tales of Vesperia, Infinite Undiscovery, Dragon Age, Dragon's Dogma (really depends on what type of RPGs you like)
Old School? Final Fantasy IV, VI, IX, XII

As you can tell I have a bias towards JRPGs :)

The Elder Scrolls IV: Oblivion is really fun.
Paper Mario is also a really good choice.
Tales of Vesperia is amazing!

Persona 3 FES

If you can stand getting your ass kicked every other boss fight.

I think it's one of the most difficult rpgs I've ever played.
