Zombie-like =/= actual zombies. Fiction in general tend to skip over this part because it gets into too many grey areas in many different fields, and it slows down the story. From what I've seen in zombie movies and such, the less time killing or evading the zombies, the more filler it gets to, which is a total crapshoot.

Possible, but extremely unlikely. Most of the zombie-like diseases are either in poor/isolated places with no chance of spreading beyond a certain area, are easily avoidable, or on the verge of dying off.
The zombies coming out of their graves pretty much came from old Voodoo tradition and was rather commonplace in zombie media until the mid to late 90's. {or possibly earlier}

Like most things in entertainment, the zombie apocalypse stories {or zombies in general} are a fad. While they have a dedicated genre and/or group of fans, it's not that much different from other pop culture fads. {i.e street racing, snuggies or the ever annoying flash mobs.}
