I went to an asian restaurant last night and tried to order the fried pork intestines. The lady said NO!! NO! ONLY FOR KOREAN AND CHINESE!!
When I inquired as to why she said that it smelled really bad and us westerners surely would not enjoy food that smells half digested.

I don't think she meant it that way. When you have to speak a language you hardly know anything about, you cut corners and try to say things the simplest possible way. She was not refusing to give it to you, she was just suggesting that you should make another choice.
I don't think that was racist. I think your server was trying to tell you that it was a unique cultural dish that is normally preferred by people who grew up eating it, like cow tongue and pickled pig's feet.
You should've just told her that you have no problem handling the smell of it. I'm sure she wasn't demanding you not to order the intestines. She was merely trying to suggest something else for you.
