The vikings were often tall and strong, and they were fearless and relentless because they believed dying in battle was the best thing that could happen to them because they could go to Valhalla. They had decent tactics, but the Spartans probably had better. They definitely had better weapons. The vikings didn't have very good metal for smithing. The samurai also had very good weapons. The katana is a very sharp sword and is very strong and durable while still being relatively light compared to other swords of its strength.

So is this just one on one fight?

It would probably come down to the viking or samurai, spartans and greeks in general had used hoplites in a phalanx formation to be a impenetrable wall on the battlefield and works when they retain their formation. But in one on one, the spartans equipment such as his aspis (the large domed shield) would be of a disadvantage as it is not held in the hand but attached to the arm, leaving the legs open to attack.

Samurai did not have any grip shields to my knowledge but they did have square shoulder armour (called sode) which could be used as a shield but they would have to turn their hole body to line the armour up with the attack and would only work with light to medium attacks, a heavy blow could break a bone.

All three warriors used spears most commonly for melee, samurai also had naginata for a cut and thrust polearm or cut and hook polearm if the tip was curved enough.

But all warriors did have swords as backup (or axes and big knifes depending on their wealth).

Spear and shield is not a good combo for one-on-one fighting or dueling, spear wielded with two hands is good for one on one fighting and so is A sword/axe and shield combo.

A sword on its own, like how a katana is used, is very hopeless to use as your main weapon and as such a samurai used katanas as sidearms for when the enemy was too close to use a bow or spear. But there nagamaki and odachi, which were much bigger katanas which would have a longer reach and a thicker blade to absorb heavy blows.
