Take a can of tuna, drain it, and mix it in a bowl with mayonnaise. Then take two slices of bread, spread creamy peanut butter on one slice, the tuna fish/mayo combo on the other, and put them together and enjoy. Peanut butter and tuna fish sandwiches are yum.

(Mashed) Potatoes don't have such a pronounced flavour, so they go pretty well with many things actually. Heck, I've even seen someone make chocolate cupcakes with them.

Personally, I often put apple sauce on mashed potatoes, which I can imagine other people may find a bit weird though.

That's sort of how a lot of weird combos come about. You find and use a substitute and then discover how good it actually is.

No idea what "doridos" are, but Nacho Cheese Doritos on top of a bagel with cream cheese is oddly delicious.

I eat this for breakfast a lot if i'm in a hurry. It's not really a "weird combo" but I thought I'd share it because it is delish.
Get two pieces of bread, and then fry them in a pan covering each side with some grated cheese. You'll have to do that one side at a time or you'll have cheese going all over the place. Make sure you don't just melt the cheese and lightly toast the bread.. Cook that shit 'til the cheese is crispy and you can run your fork over it and it makes that grate-y sound. (You can probably add other stuff to that aswell while you're cooking, sauces or condiments or whatever)
Then fry an egg, sandwich it between the two pieces of cheesetoast with a sauce (I use worcestershire) and then eat with a dark meat. Bacon's good.
It feels natural to eat it like a sandwich, but It's better if you eat with a knife and fork and take mouthfuls of the meat with the egg and toast. Great taste.
