I know how you feel. Both of those are the main reasons as to why I deliberately use an older version of skype. Another would be the fact that you have a volume-slider for the entire call in the call-interface itself, rather than having to go into the settings to fiddle with it. Some people are just louder than others, so it's better to be able adjust that on the fly.
Skype made some mistakes like that, removing tools that were handy and changing the interface completely with every semi-annual major update. That's why I stopped updating it in 2010. All-in-all, it's still a really good program, though. I recommend oldapps.com for a proper version.
