Easiest game I played: Hang Stan.

Age of Zombies. Beat it in 30 minutes. WarioWare Touched in 17.

If they don't count, I beat Kirby Squeak Squad in one six hour sitting.

Age of Zombies was pretty damn easy.

Survival was food though!

Any of the Kirby games. If I'm interested enough the average Kirby game will most likely only take me a day at the most.

If required game time would be an indication of how difficult a game is I guess Portal would be the easiest game I've ever played, since I beat it within 3.5 hours. It was still fairly challenging though, especially at some of the later stages.

But when it comes to gameplay:
Some of the Kirby games were pretty easy to beat and I remember Paper Mario for the N64 was also not that difficult. I still liked these games though, and I understand they were mostly made for kids so they can't be too difficult.

The game that takes the cake in my book is Final Fantasy VIII. This game is incredibly easy once you understand the junction system a little (which is really not that complex anyway). I think the "monsters level with you" idea is good in principal, but it seems the game assumes that you spend no time at all collecting decent spells to junction to your stats. If you make good use of the magic/card/item refinement abilities of GFs, you can get your hands on great spells early on in the game and stay completely overpowered right up to the end.

You can't die at all, and almost everything is easy.

Collecting light seeds was a bitch though

Spyro 2 Riptos Rage, you can 100% in an afternoon.

Kirby: Epic Yarn was the easiest game I have played this year.
