Did you know...

If you store sour cream upside down in your fridge, it will stay fresh much longer, because as the cream falls to lid, it becomes truly airtight.

I'll ignore the apparent irony of making 'sour' cream stay 'fresh' for longer, but I do have to point out that making jars of food completely airtight only encourages growth of the worst form of food poisoning you can get.

The only major valid reason for keeping your food shut in containers - provided they are already in the fridge - is to avoid letting the small particles particles from a source like a block of really rancid cheddar from contaminating perishable foodstuffs.

Yes, it's cool to be picturesque and shove everything in Tupperware or Ziploc baggies, but usually the shutting seal of a proper fridge is good enough to protect your edibles and liquids from the majority of outside crud.

I work in a food microbiology laboratory. We have a fridge full of Salmonella, Listeria and E.coli O157 in there.

No-one steals my food more than twice. The second time will put them in hospital for a month. >:D
