There are probably lots of soundfonts available for that kind of sound. Just search for violin soundfont and you should get a good one.

Find someone who plays the violin, point a decent dynamic or small diaphragm condenser at around the halfway point on the strings and go nuts.
Meh, pretty much any orchestral VST/AU should have a decent violin sound.
Making a good synth string sound is around 50% your sample quality and 50% how much time you put into programming crescendos, attack, release, bowing, velocity etc in a musical way. Just be aware there isn't an ez button for good sounding strings :D

If you want sounds that sound as good as that example, then I would say LiquidOoze has the right idea with Soundfonts.

You might want to build up to more impressive orchestral sounds though. Start with editing your soundfonts until they sound halfway decent then look at some more impressive sample libraries. If you want good violin sounds you'll probably need to spend some serious dough. I know professionals who use EWQLSO, East West's Hollywood Strings and Hollywood Brass, Vienna Symphonic Library and Sonic Implants.
Now keep in mind that none of these is as good as a REAL violinist or musician, they are all approximations of the real thing. You can get very close though with enough tweaking, eq'ing, compressing, etc.
Apart from applying the usual techniques for treating MIDI instruments such as velocity editing, learning the instruments limitations, styles and general research on the instrument, violins always need a hell of a lot od automation. Bowing is not done at a constant velocity/volume. Imagine what it would sound like in a real orchestra. Also remember to treat a string ensemble sampler differently from a solo sound. Most samplers are of ensembles such as first violin section. Do not get it confused as a solo instrument.
