As for Disneyland...I wouldn't do it unless you were working at a very, very high end restaurant. Amusement park faire is usually frozen and tossed in fryers or on a grill. Usually no skill is required.
You have to be careful is all. Sometimes amusement parks describe one job to you...and the experience turns out to be entirely different. I worked for one for 3 years (very big name, and not trashy) and I didn't learn jack shit about cooking.
