I'm going to say the Velvet Revolver cover of Pink Floyd's "Money". It was for the 2003 remake of The Italian Job. While it isn't as good a film that one song stands out for me as being one of the best things in the entire film.
Oh, and "Mad World" by Gary Jules. When I think of that song I think of that version over the original, so that just goes to show how well done it is.

Honestly I never really got into the cover by Gary Jules it sounds little depressing compared to original by Tears and Fears.
