I would like to learn about them so I recently bought the STK500 development board from Atmel and a microcontroller along with a book called "Microcontroller Projects for the Evil Genius." The book won't really help me though because the projects involve building individual modules with microcontrollers for each project, and I don't want to do that (which is why I bought the dev board). It should provide useful code that I can use though, in C language.
Anyway, if anyone knows anything about them and would like to share any knowledge, I'm interested :)

Very similar to C++. Program structure is slightly different, and there are a ton of built in functions. The documentation and examples are very helpful too. It's good for hobby purposes, but for any serious designing using microcontrollers, this wouldn't be appropriate.
Okay, what exactly is Arduino? Is it a brand, microcontroller, language? I'm confused :S Like can I use my Atmel products but program them with the Arduino language?

Arduino is an Italian company that makes its own microcontroller boards. As far as using Atmel... You can't use the Arduino interface to program Atmel products and vice versa since they use different languages.
