I loved Clay Fighters for the SNES. Game was awesome. I bought it again a couple years ago, actually.
There's also The Dream Machine.
Personally, I'm not a fan of claymation, but the more variety, the better.

I only ever played a demo of Neverhood, and it looked awesome. Then there was that other one with the skulls and the monkeys. Can't remember what it was called.
