I disagree. Some games just aren't structured that way. Normally purely story driven game have that sorta set-up where you can just restart a level but a more open world game just wouldn't work that way.
Obviously you're point the finger at fallout 3. How could you just restart a level in that game... IT'S NOT SET UP THAT WAY! and if anything the game auto-saves so that kinda like starting the level over.
Games like Assassins Creed are more linear in design then Fallout and can easily put you back to the beginning of the levels.

I agree with hating escort missions. That's what ruined Resident Evil 4! Everything was going so well, then I had to stop some annoying rich girl from getting shot! I'm trying to make sure I'm not getting killed, never mind someone else!
Also I hate timed sections. I hate being rushed while I'm gaming. Especially when you've got 30 sec's left, and then fat arse faced Boss suddenly shows up and blocks me from escaping. Then I have to re-do or the bloody time panicking again......which I hate!
