What is your opinion of a guy who is modest? Whenever I do something that generates praise from people, I tend to not say anything in fear coming off as an egotistical douchebag.

I'm fine talking with girls in normal situations, but whenever I get a "good job" or something to that effect, I just don't know what to say in that situation.

Does this make me seem too shy? I just want to know whether or not I should start saying something other than a modest "Thanks".

Guys can state their opinion, if they have desire to do so.

It won't hurt your chances with the girls to show a little bit of self confidence I'd say. Of course you don't have to get cocky, but if you're always acting shy and insecure then that probably won't score you many points either.

Big egos are so unattractive. It's good to be able to take pride in something you're good at but if you don't feel comfortable offering anything more than a thank you then it's perfectly alright to just do that. At the end of the day girls will appreciate you more for just acting naturally instead of acting like someone you aren't.
