When you say "Europe", you are talking about the continent of Europe, including all the countries in Europe. When you say "Africa", you are talking about the continent. When you say "Asia", you are talking about the continent.

Someone who lives in France can say that he's European.
Someone who lives in Zimbabwe can say that he's African.
Someone who lives in Vietnam can say that he's Asian.
But I cannot say that I'm American if I live in Canada?

It depends on the language, in Portuguese, we don't say "America" referring to the US, but we do say "American" as in someone from the US.
