and even if Green Day isn't my favorite band I thought they did a good job with Working Class Hero

Probably Dark Tranquility's version of Metallica's My Friend of Misery. They do the song so much better.

Metallica's version of Whiskey in the Jar is pretty good as well. If only for Lars Ulrich bieng "metal" by pulling a bookcase off another bookcase, while the rest of the band totally trashed the rest of the house.

Fall Out Boy did a good cover of Micheal Jackson's Beat It. Plus, John Meyer did a good version of Eddie Van Halen's solo too!

Metallica did, in fact, cover a Queen song.
