Just answering some stuff on this page:
1) I've been categorizing "Escape" games as Adventure - Point 'n Click, although it is getting tempting to give them an entire sub-genre. I always tag them with "escape" - this way when users can eventually search by tag results, they will be able to generate a list of all the escape games. It also means that ultimately the view page will show "escape" as one of the tags, and clicking it will lead to a list of all escape games.
2) Changing the content rating for a submission takes a long time to submit because it has to do some massive re-indexing of data. I tend to let it sit for a while, then hit Submit a second time and if enough time has passed, it works. In terms of when to change ratings...
Be lenient when switching things from TEEN to MATURE. For example, Castle Crashers and Alien Hominid were rated TEEN by the ESRB, so all that blood and decapitations is ok in the TEEN category. The most important thing is to make sure all the purely adult stuff is rated ADULT.
